Taking On The Leftovers | Holidays Wind Down

It is the day after Thanksgiving and you may be suffering from a tryptophan hangover,  a mile high stack of dishes, and an overflowing refrigerator full of turkey day leftovers. While I can’t help you with everything you might be struggling with I can help with what to do with all of those glorious leftovers.

Who doesn’t love leftover sandwiches am I right? But the problem is that after about 3 ok maybe 2 of them it gets kinda old, and by the time you are ready for another one, the leftovers have all gone bad. With this recipe not only can you enjoy the leftovers in a new way, you can freeze them to enjoy later. Your family will thank you for not making them eat Thanksgiving for a week straight.

LEFTOVER POCKETS

What you will need:

  • 1 Can of frozen phyllo dough
  • Melted butter
  • Salt & Pepper
  • Leftover turkey
  • Leftover Stuffing
  • Leftover yams/ sweet potatoes
  • Leftover cheese (brie is perfect)
  • Leftover cranberries

Start by preheating your oven to 350 degrees and pull out the phyllo dough to dethaw a little bit. Gather all of your favorite leftovers and let’s get started.

Begin by cutting your phyllo dough into 4″ x 4″ squares you can cut the top and bottom layer at the same time.

Then scoop a small portion of each leftover of choice into the center of the bottom square.

Add any extra seasoning you may want, in case Aunt Jo didn’t season the food to your taste 😉Once you have added all of your ingredients, take the top square of phyllo dough and set on top of the bottom. Take a fork and press all edges of the dough together forming perfect little pockets. Brush the top of the dough with a light layer of melted butter and put in the oven for 15-18 minutes or until the crust id a golden brown.Pull out of the oven and enjoy! The best part is that you can make quite a few of these at a time and wrap them in wax paper and place in freezer bags and enjoy them later by simply reheating them either in the oven or microwave.
